This was an amazing quiche. I was worried about the crust, but it turned out perfectly. I did not have a cast iron pan, so I just used a non stick that could go in the oven. You need to make sure that the potatoes are really dry. I made the filling per the recipe and found it to be a perfect balance of cheeses and asparagus. Had no problems getting it out of the pan. I made this for Easter Brunch, and it was delicious I, too, will have to experiment with the hash brown crust, as mine was not very pretty at all. Loved this quiche I did not have some of the ingredients so had to substitute used aged cheddar instead of Fontina. Did not have any asparagus so sauted a little spinach and used some roasted bell peppers I had on hand. Also used thyme did not have any tarragon. The potatoes browned beautifully everything worked. I suggest soaking the potatoes in water after shredding, drain, add 12 teaspoon of lemon juice before squeezing out the excess water. Also, as noted below, I browned the potatoes in the oven after the stove top method to brown more evenly thus creating a brown crust. The only problem with this dish is the tarragon which overpowers the rest of the ingredients. I would suggest using other herbs instead, maybe coriander and parsley. I added speck to the shallots to give it more flavour. The potato base is still not as good as a pastry base. Disregard most of what I just wrote. I might have forgotten to add oil to the frying pan in addition to the butter. I will give this 3 forks now to make up for the 2 forks I previously gave. Sorry I made the recipe as written, except for a few minor changes based on other reviews. To cut the potatoes, I used a Cuisinart shredding disc, which looks like what was used to make the quiche in the photo, but one certainly would not get that type of crust using the largest holes on a box grater. I used a 1. My potato crust stuck to the bottom of the frying pan, and only the top edge of the potatoes got crispy. Most of the potato crust ended up mushy and dark gray. The filling cooked fine in the stated amount of time. Two tablespoons of butter for 2 pounds of potatoes doesnt seem to bee enough fat or the right fat to create a crispy crust. I used fresh tarragon, which is what I think the recipe calls for, and I like tarragon, but the quiche ended up with an overwhelming flavor of tarragon. I cut my thin asparagus into 3 sections and lay the pieces in a starburst pattern, which worked out well for cutting and serving, but the crust didnt cook properly for me, and there was too much tarragon. Perhaps a non stick pan would have worked better. I consider this an insufficiently tested recipe. Used this recipe combined with another for making a smoked salmongoat cheese quiche. Use a non stick oven safe skillet. Oven set to maybe 4. Put a tab of butter and a bit of oil in pan. Add hashbrowns and start to cook them until no longer frozen on medium burner. Then with a greased mug, press into crust shape. Cook on stove until you start to worry about the bottom burning before the top cooks. Transfer to oven for maybe 1. Set oven temp at the temp for the filling after about 1. Then, continue as the recipe says, or use different fillings if that is on hand. The recipe is robust to changes, which is important for day to day cooking. Ive used leeks and leftover Serrano. Ive used different cheeses, although always some fontina. Made as written, though I couldnt make myself use that much tarragon. I used one full tsp only. I dont have the skillet so I had to use heavy duty Belgium skillet that was slightly smaller, which meant using only 3 potatoes I used the whole bunch of asparagus though. After the potatoes were browned on the stove I put the skillet in the oven to broil for a bit to ensure the crust was cooked. Great recipe. Would make this one again. The tarragon tasted real nice and we had a bit of a difficulty getting the sides loose from the dish I baked it in. And 3. 5 minutes was enough to get a brown crust. The fontina was a problem but I read online that emmenthaler or gruyre cheese was a good substitute. But other than that I only had to converse Fahrenheit to celcius.
