Pressed crust ready for the oven FYI white sweet potatoes are a less sweet variety and are awesome for savory recipes so the sweetness doesnt overpower the rest of the flavors. Also, as noted below, I browned the potatoes in the oven after the stove top method to brown more evenly thus creating a brown crust. The only problem with this dish is the tarragon which overpowers the rest of the ingredients. I would suggest using other herbs instead, maybe coriander and parsley. I added speck to the shallots to give it more flavour. The potato base is still not as good as a pastry base. Disregard most of what I just wrote. Sorry I made the recipe as written, except for a few minor changes based on other reviews. To cut the potatoes, I used a Cuisinart shredding disc, which looks like what was used to make the quiche in the photo, but one certainly would not get that type of crust using the largest holes on a box grater. I used a 1. My potato crust stuck to the bottom of the frying pan, and only the top edge of the potatoes got crispy. Most of the potato crust ended up mushy and dark gray. The filling cooked fine in the stated amount of time. Two tablespoons of butter for 2 pounds of potatoes doesnt seem to bee enough fat or the right fat to create a crispy crust. I used fresh tarragon, which is what I think the recipe calls for, and I like tarragon, but the quiche ended up with an overwhelming flavor of tarragon. I cut my thin asparagus into 3 sections and lay the pieces in a starburst pattern, which worked out well for cutting and serving, but the crust didnt cook properly for me, and there was too much tarragon. The tarragon tasted real nice and we had a bit of a difficulty getting the sides loose from the dish I baked it in. And 3. 5 minutes was enough to get a brown crust. The fontina was a problem but I read online that emmenthaler or gruyre cheese was a good substitute. But other than that I only had to converse Fahrenheit to celcius.
